I forgot to say that I also saute it with different vegies such as onion, pepper
and squash. I then use this plus some cheese and salsa to put in veggie
burritos. I usually add black beans to this mixture. I'm a vegetarian, so
have to get creative. Sometimes I saute the kale, onion, pepper, then add
scrambled eggs, cheese and salsa for a breakfast burrito.
I read that combining eggs with greens is very good for you.
I've seen several soup recipes that call for kale.
Tracy, I like your idea of the kale with pasta. I have some kale, so think I
will try it for dinner.
