Tracy, I've had good luck rehydrating apples for pie.

Hah, funny girl!
I have a dehydrator, and it dries apples very well, but can they be
re-hydrated for pie with good results? You want nice, juicy chunks of fruit
in pie. Or at least I do.

Tracy I have a solution for you.

You can very carefully pack up those apples and send them to me. I will
send out reports letting everyone know how much I'm enjoying them. Lol

I've made pie filling before and canned it, but I have to peal slice and
core, so it doesn't save time.

I don't have any good ideas.

Once I saw some dried apples that had been cut in long spirals, but I don't
know how they did it. I think the core was removed and then the apple was
cut into the spiral.

Sorry I can't be more helpful.

The apple harvest is rolling in, and they are tasty.

Does anyone know a quick way to preserve apples in a condition so they can
be used later for pies or cakes? This seems to require that they be cored,
peeled and sliced. I have the do-hicky that one presses down on an apple,
and it cores the apple and slices it thickly, but they need to be sliced
further and peeled. This weekend, it took me about 90 minutes to process 10
apples or so for pie. I'm slow, I guess.

I have read that apples can be cored and frozen whole after that, but I
don't really have freezer space for a lot of whole apples, and I think
peeling might be easier while the apples are crisp, which they probably
won't be after being frozen.

Anyway, if anyone knows a better way to deal with apples and still keep them
chunky, I'd like to hear it.

Applesauce is the easiest, but I also want pie!

Tracy
