[Ag-eq] Eggplants

Well!  what is the nice colour of eggplants?, if it is yellow, you are quids in and why not confuse 
your friends by giving them, the eggplants, not your friends,  their other name zuccini.
However, if you feel an urge to call your friends egghead, whoops eggplant, or zuccini, go right 
ahead!     They will be very impressed with your vast horticultural knowledge!
While touching on the subject of coloured works of nature, let me tell you a tale.
One day, a child's pet lamb fell into a bath of red dye that its mother, the child's, not the lamb's 
had out of the lawn in which she intended to soak and brighten up the lounge curtains.
The lamb was hauled out but its wool was now scarlet.
Actually, it was quite fetching and so a tourist thought as he passed by on the road.
He came in to speak to the farmers and asked about this scarlet lamb and was told that they bred 
them that colour and, if he  didn't mind waiting for 6 months, he could have the skin.
The farmers kept their promise and the skin was, duly, delivered to the erstwhile tourist who was 
now back in America/Japan/China.
Gullible folk were so taken with the scarlet skin, all completely, natural, they were assured that 
the breeders of these brightly-coloured sheep in New Zealand  started to get emails and texts from 
all over the world asking if they bred sheep that came in other colours, so Mrs Farmer was kept very 
busy dunking reluctant sheep  into vats containing all sorts of dyes, so now, from being, by a fluke 
of the most amazing luck,  a single lamb dyer, he has become the biggest damned liar in  the 
district.

Does anyone know how to tell when an eggplant is ripe?  It's so seldom I get
one to actually make it that far, I'm not sure when to pick it.

Do they soften up, like tomatoes do?  Do the flower remnants on the top
loosen up?  Should I get out the color detector and try to tell if it's
purple?  Not that I know what color it is when it's not ripe.
