> 1 cup to 1 pound smoked sausage, sliced
> 1/2 cup Worcestershire sauce
> Tabasco sauce to taste
> 4 large fresh tomatoes or one 12-ounce can
> 1-1/2 tablespoons salt
> 4 slices bacon cut into 1-inch pieces
> 2 bay leaves
> cayenne pepper to taste
> 1 teaspoon brown sugar
> 1 tablespoon lemon juice
> 4 cups uncooked rice, cooked

> Method:
> Break the turkey carcass into several pieces. Place it in soup kettle
> with legs or thighs and 3 quarts water and 1 teaspoon salt. Bring to a
> boil and simmer covered for 1 hour, then cool. Discard bones and other
