That is exactly the sort of trivia I pride myself on knowing. I always understood 1.25 ounces for a "shot", though Carol is right-- I  looked it up and it varies. 

Apparently the range is quite wide-- from 20 ml to 60 ml based on the country for a "legal standard"

For the USA. the definition I find which makes the most sense is on the CDC's web site, which states:

"A standard drink is equal to 13.7 grams (0.6 ounces) of pure alcohol. Generally, this amount of pure alcohol is found in:
12-ounces of beer.
8-ounces of malt liquor.
5-ounces of wine.
1.5-ounces or a “shot” of 80-proof distilled spirits or liquor (e.g., gin, rum, vodka, or whiskey)."
So for 100 proof spirits, it would be more like 1-1/4 ounces (actually 1.2 ounces). 
Pure alcohol is 200 proof, so that's how you would get down to .6 ounces which would actually be a bit less that 20 ml. (17.74ml)
As a practical matter, you wouldn't find much over 190 proof, so the 20 ml low-end number makes sense. I guess that would be around 180 proof.

So for the scientist or educator in all of us, there is the precise answer.

With cooking and using Orange Juice? I'm thinking go generously with 1.5 ounces!
