Hi
If a book was written fairly recently you can try contacting its author
or publisher and requesting a copy of the LaTeX source. Obviously they
won't always still have the files or might not be happy to let you have
them but generally I've been quite successful with this.
If you have an article or book in PDF you can try using InftyReader to
perform OCR to convert it to LaTeX. The accuracy varies considerably
for different documents.
Finally, many papers now are put on arxiv.org before being published.
In that case the LaTeX is often available.
