Hi,

I may be coming in late here but Excel is very screen reader friendly. Jaws has dedicated commands for it. 

If you are going to be accessing material on paper, you may have to use Infty Reader which is an OCR that  converts print to Math. I believe it can render output as LaTEX or as MathML. 

You may also want to consider packages like r and perhaps the python programming language  that have libraries for handling large amounts of data.
