You can always connect to it via ssh. As long as what you want to do can be achieved on the command line or in a text console-based application, it will work.

So, for example, relevantly to this mailing list, your LaTeX document generation will be fine. You should be able to run algebra systems such as SageMath over an ssh connection as well. If you're comfortable with Unix text editors, which are still the best in my opinion, you can edit your LaTeX documents remotely too. If you want to use Git (or something else) for revision control of those LaTeX files, that's also straightforward. If there's a printer connected to the Mac, you can print the PDF files generated from the LaTeX documents with a single command... and so on.

I don't know what you're planning to do remotely, but my point here is that there are various tasks which a mathematics-oriented person might want to accomplish that are entirely achievable with an ssh connection to a Mac, or to a Linux system for that matter.
