Since I have never used Pandoc, I don't know if there's a way to reconfigure the MathJax string creation. However, you could hand edit the resulting files by removing the current JavaScript string for calling MathJax to this one:
<script type="text/javascript" async
  src="https://cdnjs.cloudflare.com/ajax/libs/mathjax/2.7.7/MathJax.js?config=TeX-MML-AM_CHTML">
</script>

Hello Steve,
thank you for your answer!
But how can I go back to an earlier Mathjax version? I use the
following pandoc command to convert:
pandoc -s -mathjax -o output.html input.md
The command itself just says "mathjax", without any reference to the
mathjax version. How would I need to change the pandoc command to
access the language settings in the menu?
With Kind regards
Niels
