Hello John,
I'm not anti-LaTeX, I'm anti pdf. Every LaTeX document I create is habitually compiled to HTML, usually at the same time as I create the pdf for distribution to single file inaccessible document lovers.
My CV is in LaTeX, but perhaps that's because it would be lots of work to change it to markdown. OK, not days and weeks, but more than the needs would justify. In contrast, I converted some old teaching material from LaTeX to markdown in 2021 because the end result (HTML) was of greater use to the students than the pdf would have been, and the LaTeX driven HTML pathway was a much greater hill climb to contemplate.
If a journal/conference demanded LaTeX, I deliver it. If they demand MS Word (yes it happens) or plain text, I deliver it. I'm likely though to have started it in markdown whichever format is being sought.
It is great that in 2022, we have choices. Twenty years ago the only option was LaTeX. Nothing else worked for blind authors.
If we don't have more than one option on the table, we don't get to make a choice. No choice means someone else in in control of our destiny. In my experience, the most successful people are in control of their own destinies, or extremely fortunate, sometimes both.

Jonathan, by no means am I saying you're wrong, I'm not qualified to say that. But one thing that worries me about your approach is that at the Math Department at the University of Wisconsin, we don't even give access to Windows machines to our grad students. Every grad student office has a Linux machine with a few also having Apple machines. And I used to teach a minicourse on Latex but we stopped doing it because students are expected to know Latex by the time they get to us. Latex is considered such a fundamental skill that we don't even offer it as a minicourse any more. My department just bought a license for a tool called Overleaf that allows users to edit latex documents cooperatively.
I am worried that by directing students toward MathML and Windows tools, we may be making it more difficult to reach the highest levels in the world of mathematics.
Personally, I don't have any experience with MathML. But I do all my document writing in Latex. My CV is in Latex. I even use Latex when I'm writing a letter to my Senator. I write it in Latex and convert it to PDF for printing.
