It's an iTunes standard MPEG4 AAC file (usually named .m4a), just
with a different extension.  When iTunes first got audiobook support,
Apple used the .m4b extension to tell iTunes that the file was a
book.  Today, you can edit metadata to mark any audio file as an
audiobook, so the extension is mostly vestigial.

Technically you could actually just import the 30 or so mp3 files and
edit all of the metadata by hand now, but I still find it more
convenient to use the .m4b files.  Plus Audiobook Builder does a lot
of the metadata stuff for you pretty easily.
