Diane, you are right, it does defeat the purpose, but you can buy 
wood chips for many gas grills.  You wrap them in foil, soak them for 
a while and after putting a few slits in the foil, place them inside 
the grill and you can get the flavor.  There are many different types 
of chips you can buy.  They are inexpensive and come in pretty good sized bags.
