Twice baked are easy!
Bake whole potatoes once as usual.
Cut in half & scoop out potato from halves. Save shells for restuffing.
Make mashed potatoes.
Put mashed back into skins. Cover with cheese, bacon, onion, etc.
Reheat in oven until medium crispy on top.
