Hi Shai,
Honestly, from my experience I find that unlike other venues and support accommodations, requesting meet and assist in advance doesn't really do much to begin with, especially since you're never guaranteed to automatically receive assistance without asking for it again at the airport which is precisely why I don't bother doing that. Additionally, while requesting it in advance with the airline doesn't automatically grant you the assistance you requested automatically, I've also found that airlines will often times assign your seat inaadvance to specific rows they think you should sit in like the front of the plane. This is another reason why I don't bother requesting assistance in advance, because then this would allow me more liberty to select my own seat and therefore sit closer to where I actually want to be situated on the plane.
Just like Raul, I also wait until I arrive at the airport to request the meet and assist service, and have also had tremendous success doing this; I've actually never been forced to ride in a wheelchair at all. While I have had the experience where the assistant asked me (and even wondered if I was sure) to use a wheelchair, they've always conceded in the end when I informed them I didn't need it.
I don't know anything specifically about the Fresno Airport where you're going, but when you land you can always ask the person assisting you that you want to be taken to the Uber/Lyft pickup spot, and that you're going to request the respective vehicle. You also have the option of asking him/her to wait with you until your vehicle arrives, or else call or text the driver to ask them to look out for you because you're blind, whichever you feel more comfortable with, if he/she does ask you what you want to do after you request your vehicle.
I hope this arfo that we've shared so far is helpful, and I hope you have a wonderful and enjoyable trip—I'm also sure it will turn out great for you in the end!

Unless things have changed, at least here in Houston, the way that it is typically done, is you request what might be called a meet and assist. This is usually done when you check in upon your arrival at the airport. I do not believe it is an airline specific feature, but rather an airport accommodation feature. Whenever I have done this in the past, I have specifically mentioned that I only need a guide with no wheelchair. 7 out of 10 times, this is successful. If they still bring a wheelchair, I will happily use it to put my bag on it or offer to push them if they give verbal directions. Depending on how rushed you are on time and what your comfort level is with traveling and the complexity of the airport, some people have chosen to still use the wheelchair. Just know that no matter what you choose, in the end, whatever you decide for yourself is best and that is showing your Independence. I hope this information helps.
