Hi Jennifer,
I don't think the model matters too much.  Personally I like the one where
the grill plates are removable and can go in the dishwasher.  It makes clean
up much easier, but this is much more a convenience thing than a blindness
thing!  Some of them have timers.  I guess the important thing would be to
make sure the timer actually has buttons he can feel in order to set it, and
that it beeps or something so he knows he's entering the amount of time.  Of
course, some flat pads can be brailled, and he could always use something
else to time the food, so that's not a huge deal.

would like to know what do you think is the best model to get for him.  I'm
looking at ease of use for him since he will not only be cooking for himself
