I like the jacket idea.  On an airplane, I have tried counting the seat
backs, but it's quite common to miss one coming or going, so the marker
strategy can work for you if you have the area narrowed by some sort of
counting process.  This is one of the rare situations when I'll count steps.
I absolutely never do step counting in other mobility situations because
invariably there will be some sort of distraction that will mess up the
count, but getting back from the lavatory on an airliner is so structured
that steps are highly reproducible and you don't need to grope every seat as
you go by to count it.

I leave something on my seat, like my jacket or something that is familiar
on my seat so I can recognize and find it. I would, of 
course never walk off without my my Pac Mate or money. Another way if you
did not want to leave something in the seat is to count 
the rows from the seat to the door. This way, you can count them when you
return.
