The thing I had an issue with was the chance that a picture could fall off
the wall onto my little one's head.  Not that any picture ever fell off the
wall in my house, but the potential was there and so I made sure Gab didn't
play near the walls where pictures were and nothing was hung on the wall by
the crib.  I told you, I am the paranoid one. Silly! V

They do, I think because people lack day-to-day experience with kids, so
you truly don't know what is and is not dangerous to a child as they
develop. 
I had no idea chords were bad.I didn't know this until one of my friends
told me to move the crib away from the window so "your baby won't tie
the chord around her neck". My first thought was "When she can tie,
she'll know not to do that". Even if I'd moved the crib, my daughter
could have still gotten to the chord crawling around the room, hence why
they had to be hooked up with some device in the wall, a device I never
knew existed. 
Baby proofing as we know it has really only been done since the 1950's
which is interesting to think about, especially next time you talk with
an older person. 
Please know too that what is "common sense" to you may or may not be to
someone else and what is "wasting your money" to one family may be what
they need to do because they lack the time, knowellege or skill set to
do it themselves. Kind of like hiring a housecleaner or dog walker or
anything else, we all do what we need to do.

You will want gates to keep a kid out of areas where you can't
supervise, a place to play, and you'll want to cover all outlets and
make sure all chords are tied up so that they don't pose a strangulation
hazzard. You'll also want to make sure that furniture won't tip over
onto your kid if he/she pulls it down and put corner guards on objects
with sharp corners. You'll want to put harmful chemicals out of reach.
Mostly though, you want to know your kid because you'll know when
they're causing trouble or about to by what they say or don't say and
the sounds they make or don't make. 
You'll want to have trash cans that are out of reach because most of
what people throw away is just nasty or is harmful i.e. bottle caps are
a choking hazzard. 
I'll say that we used a baby proffing company mostly because at the
time, my husband was working an incredible amount of hours and I had
plans to go to the beach with my family. I knew there was no way we'd
get the work done because "we" wouldn't be doing it. 
Also, the companies can or should be able to explain the items that are
really important to be aweare of v. the nice to know about ones. 
That being said, their risk tollerance is very low, and you will need to
mesh that with your own parenting style. Like all things, the mindset
can be the hardest to get used to, and changing your behavior can take
some time.
