Hi Erin, I wanted to respond to the knitting question. Yes, the NFB does have a crafters group and they talk about knitting lots. I am trying to knit a scarf and had to put it on hold. the concept is easiest if you have a loom, but i don't know if you can do a blanket with one. i have had to put it on hold, but will get back to it soon.
