Hello Jan,
My husband and I have one of these systems.  We don't use it as often as we
should, but mostly because we forget to and not because it is hard to use as
a blind person.  I would definitely recommend using Braille or some other
method to mark the bags because it's sometimes hard to tell what things are
when all of the air is vacuumed out of the bag.  Also, I definitely prefer
bags that are all ready cut to various sizes.  They do sell rolls of plastic
that you can cut to the size you want, ceal on one end, then put your food
into and ceal the other end.  I am not a very straight cutter, so this type
of roll is a pain for me to use.  I can definitely do it in a pinch, but the
presized bags are better IMO.  Also, the containers are really nice.  We do
use different canisters in order to keep our coffee beans more fresh.

i think those machines and bags are called "food savers," or something
similar. they vacuum all of the air out and seal the bag.
