I always found it easiest to sit Gab up, hold her with my left hand across
her chest and pat gently with my right.  Now my mother told me to lay her on
my lap on her back and lift her feet up, bending her knees and gently
pushing them toward her stomach.  That worked as well. Both positions, easy
peasy

As I was burping my baby this evening, I started thinking:
You can lay the baby over a boppy pillow and burp him with one hand.
But, you have to make sure that he doesn't squirm around very much.
Maybe this will help.
