I am still a pancake novice right now, but my wife told me to pre-heat the
burner/skillet before putting any batter in. I listen for the bubbles, but I
also gently nudge the bottom edge of the pancake with my spatula. If it
feels solid, it is pretty likely ready to flip.

If the skillet is pre-heated, I find that it takes one-and-a-half to two
minutes for the first side to cook, and about one to one-and-a-half minutes
or less for the other side to finish cooking. This could vary though.

I am just hoping to get better at this myself because my three-year-old
loves his pancakes! <smile>
