This sounds really good.  I wonder if other fruits could be used, like 
peaches or raisins.

Puffy apple pancakes
1/4 cup flour
1/3 cup milk
3 teaspoons baking powder
1 tablespoon sugar
1 egg
1/4 teaspoon cinnamon
1 apple, peeled and chopped.
1 tablespoon butter or margarine

1 skillet
In a medium sized bowl, beat your egg and then add all the ingredients
except the apple and butter.
Make sure they are well incorporated.
In a skillet, melt the butter, you can add more if you desire and throw in
your apple.  Stir them around and around until they are slightly softened,
maybe 3 minutes.
Pour in your batter over them, cover and cook  for approximately 18 minutes.
Now you have a choice.  The original recipe says to uncover, place a large
plate over the pan and invert it.  I find it to be quite difficult to do
this so I uncover it and with a metal spatula, I gently lift it.

If you plan to serve more than just one person, add 1/4 cup flour for each
person, 1/3 cup milk and 1 egg white.  Oh and the cinnamon and sugar.  If
you want a puffier pancake, add one teaspoon more of baking powder.
Hopefully I have not confused you, but Gab and I love these.
