Hi, everyone.

JoElizabeth, I have some thoughts about making the cake appealing: You
could order a cake from a bakery instead of making it. You could make
the cake and icing yourself and do the icing yourself and have your
daughter decorate it. You could see if anyone you know is a good baker
or cake-decorator and ask them to do it. Or maybe you could just make
cupcakes, which might be easier to deal with and could each be
decorated differently somehow. There could be one cupcake in the
middle of a big cake plate with your daughter's birthday candles on
it. Maybe if you google "Cooking In The Dark" or check a listserv on
blindness and cooking, there will be some tips on how to make a cake
come out nicely.
