This recipe is only healthful as compared to a donut. :) I found it with a
quick on line search when I thought of these during a party planning
session. I hope they are as good as I remember.
What You Need
1
pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-2/3
cups hot water
1/4
cup butter or margarine
2
pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted
dry
1
cup KRAFT Grated Parmesan Cheese
1
cup chopped fresh mushrooms
1
small onion, finely chopped
4
eggs
Make It
HEAT oven to 400ºF.
MIX stuffing mix, hot water and butter in large bowl until blended.
ADD remaining ingredients; mix lightly. Shape into 60 (1-inch) balls. Place
in single layer on 2 rimmed baking sheets sprayed with cooking spray.
BAKE 15 to 20 min. or until lightly browned.

Make Ahead
Prepare and bake spinach balls as directed; cool completely. Place in
freezer-weight resealable plastic bags; freeze up to 3 months. When ready to
serve, thaw in refrigerator. Place on baking sheets and bake in 400°F oven
10 to 15 min. or until heated through.

Lately the balance between after school snacks, dinner, and our schedule is
a struggle for me again. My two youngest get off the bus about 30 minutes
apart, and we have to be to wrestling 4 nights a week by 6.
Wrestling is only another 6 weeks or so, and this problem will resolve
itself for a while thank goodness.
Still, sometimes the timing is off, or a boy is just not hungry for dinner
beforehand and we end up eating dinner pretty late. It makes it even more
important that our snacks be on the healthier side. I thought perhaps we
could all inspire each other and share our ideas.
I just put the ingredients to make spinach balls on my shopping list. I will
make a big batch and then put them in the freezer to be pulled out a few at
a time for snacks. I know the kids like these, so I am hoping they will be
successful at snack time too.
For the record, I offered everyone a donut and a glass of water yesterday.
A pretty big fail on the healthy side. J I still gave myself points for
having a plan in place and ready to serve when they walked in the door.
