Hi Jenn,
   I understand where you're coming from. We don't have any children,
but I got married just about two years ago now. Prior to that, I had
lived with my parents or at college, so really wasn't doing that much
cooking independently. The crock pot is great. My favorite web site to
find crock pot meals is
www.crockpot365.blogspot.com

This woman cooked one meal a day for a year in her slow cooker, and
you can view all of those recipes, plus more she's added over time.
They range from the easy "dump and go" to the more complicated. It's a
great resource and I refer to the site when I'm looking for new
recipes.
   Jo's idea about making three or four meals at a time and then
freezing the remainder so you don't eat the same thing each day is
really a great one. My husband and I will do something in the crock
pot once a week or so and always have at least one extra dinner left
over, and the majority of the time we can bring some for lunch too at
work. I also find that baked dishes are easy to prepare and not all
that time consuming. You can prepare the meal most of the time the
night before and keep it in the fridge so that when you return from
work or errands in the evening you just have to preheat your oven and
go.

www.allrecipes.com
is the go to for any recipe you need. Though honestly sometimes I find
the info a bit overwhelming because there's so much of it. I hope this
