Remember, too, that you can plan a few meals around one protein source. If
you bake a chicken, for instance, it's easy to use what you don't eat the
first night with pasta or stuffing or potatoes in a casserole or on a salad
the next night, and then remake it again on sandwiches. That way, you've
gotten two dinners and a lunch. Especially if you're cooking for just
yourself and a toddler, since probably neither of you will eat very much,
you'll cook less and throw away less. Waste is a big problem when you cook
in small amounts if you don't plan carefully.

kick it about all day like a football, and it will be round and full at
evening.--Oliver Wendell Holmes, Sr.

Don't feel bad about the cooking issue. Even if one has been cooking for a
long time, the dynamics of that change somewhat with a toddler anyway.
Crock pots are wonderful things.
There are great books on Bard NLS regarding meal planning and freezing. The
easiest thing to do is to be thinking about what you would like to eat the
next week. Keep a running grocery list of all your favorite foods, when you
are half out of an item, put it on your list for the next time you shop.
Doing this will insure you have something on hand to cook and don't have to
make a last-minute trip to the store.
Also, train yourself to be thinking the day before what you might want to
have the next day, depending on if you will have time to cook. You'll have
time then to take meat out of the freezer the night before you're ready to
use it, then place back in the fridge when unfrozen until you are ready to
use.
Some people make all their casseroles and prepare dishes on weekends so they
don't have to cook as much during the week. It will also depend on how much
freezer space you have.
One thing on your list might be several sizes of Ziplock or Glad storage
bowls to organize leftovers or store meals cooked ahead.
The biggest help is to be thinking ahead, which will make the planning
easier. Making a planned menu as an example can help. You can use it as a
guideline, and vary it as much as you like. Make a list of all the main
dishes you can cook and know how to cook, or that your family likes best.
Hope these tips help, and have fun cooking.

Hi Everyone,
I'm embarrassed to say this, but I'm new to cooking.
I really want to cook more and plan ahead with meal preparation so that
we're eating healthier and saving money.
Being a newly single mom and having a toddler this is a whole new experience
for me.
How do those of you who know how to cook do it?
I am thinking about using the crockpot some, as I can prep and go then
dinner is ready when we get home.
How do you all do it?
Thanks
Jenn
