Tara, my grandson started kindergarten this year and this was a problem when my sons were in school. At least you are getting the papers. There were many times my sons didn't give them to me or I'd forget to check. 
A quick solution could be to use

As they now offer free 5 minute calls to anyone whether you subscribe to a paid plan or not. The agent might (probably could) be able to take photos of the documents and email them to you. If you need more than a 5 minute call, it is acceptable to call back to continue or purchase a paid plan if you can.
I did volunteer when my sons were in elementary school. I attended a couple of field trips and served on the school board for a few years. I also made phone calls for various organizations including their sports teams which were not school affiliated. Times and electronics have changed in 30 years since my oldest son entered kindergarten, but there will always be paper.

Also, if you take your child to school or happen to get to know some of the moms, you might ask if they could let you know of something important or if you have a person's email or phone, give them a quick call or email and ask if you need something.
If you have an iPhone, use the Seeing AI app or Be My Eyes to read the documents.
The school may send text messages about things, I think my son says he gets them for my grandkids. 
Every year will be a new year.

Hi all! I’m hoping for some help. My daughter started kindergarten this week. I like her teacher. She seems like a nice person and she seems willing to work with me. I let her know that sending home print is not accessible to me or my husband. We need documents that she sends home in an email. So what do I get on the first day of school? Three print documents. Has anyone encountered this problem and what did you do about it?   do I have the right to have documents pertaining to my child in an accessible format? On a different note, have any of you volunteered with your children’s school and what did you do and how did you accommodate for your blindness? Thanks for any help!
