[Diabetes-talk] Breakfasts...

Hey Gang:
When my husband and I were first married, I insisted on buyingh my own
skimmed milk. It was my husband who converted himself, because he didn't
want to continue spending seven bucks a week on milk and, because of the
diabetes, wasn't going to ask me to budge. So, he budged my way. I didn't
even ask him to.
I do a variety of things for breakfast. one morning, I might have a fairly
large bowl of oatmeal--the real McCoy. I never use milk or sweetener. I
sweeten it with raisins or craisins, whichever I happen to have onhand. I
actually add a little salt and margarine to mine as I cook it so that it
doesn't clump as well. I guess I like that mildly salty taste. I don't
sweeten my coffee either. I have nice hot black coffee with every
breakfast, no matter what it is. One morning I might have a sandwich made
with a homemade biscuit with one fried egg and a thin slice of cheese
slapped between the halves. Saturday mornings, it's homemade hotcakes for
the family. I just margarineize mine. I also add cinnamon in the pancake
batter for flavor. Not cinnamon/sugar, just plain cinnamon. On Sunday
morning, I make a huge egg breakfast for the family which includes mixed
veggies, celery, onions, peppers, mushrooms, and whatever else is in the
frig but the kitchen sink. I mix it with real cheese. For breakfast, I
have one slice of this with hot black coffee, and maybe 4OZ Juice. Most
times, however, I don't bother with the juice. During the week, it's either
my oatmeal/raisins, or two boiled eggs/one piece of toast. and, of course,
coffee--(The blood of life)!
Happy breakfasting!
