The part that asserts that those who stay slim eating meat do so due to
muscle atrophy.

Careful. That's a suspicion -- not something provable.

Most people I know who've done Atkins, or something similar, did no-meat,
maybe included a few raw veggies. They lost quite a bit of weight, but had
constant cravings, binged ate and eventually put weight back on. A small
handful have kept the weight off, but they literally only eat meat. They're
the handful that have the will-power to eat only lean meat, but I question
their health, and the continual thinness is most likely due to muscle
atrophied due to eating meat only.

Well, people mis-follow Atkins, as Sandi said. You are only supposed to eat
just meat and veggies for two weeks and then you gradually add in carbs. But
many people just don't go back to adding in things because either they are
afraid to or they are so happy with their beginning results that they keep
on doing it. They don't really study how you are to follow Atkins.
