True, but leftovers are not necessarily a bad thin. Before we had kids, my husband and I did a lot of crockpot meals too. Usually, it's cheaper than preparing several meals. And because of our busy schedules, it was easier to slow cook meals instead of making a meal at the end of the day. Of course, it depends on the person (s) and day, etc. But often, I made a couple of crockpot meals, giving u options for leftovers for the week. For this time of year, I might have made something like a soup, protein and veggie dish (like potroast) and a shredded protein like turkey. It gave us a lot of meal choices, and especially with shredded protein, you can do a lot of variations of meals. But if someone struggles with nonvisual cooking right now, or just anyone beginning at cooking, making crockpot meals can be easy and simple with little fuss.

Another idea, as you suggest, is to buy bulk of individual protein, like hamburger patties and fish fillets (although you have to be careful with prepared meat patties, because they tend to be high in fat and usually not made from good cuts of meat, always look for lean options) then make veggies in the crockpot so you have a veggie side to accompany the protein.

Hi Bridget,

I have a slow cooker/crock pot also and while it does make good food, for a single person my on-going problem with it is that I’m left with a lot of left-overs. I don’t mind having enough for 2 or 3 nights top, but after that I find I get sick of it. You have a large family there and I’m sure its a wonder appliance, but I think for singles especially if trying to watch weight its a bit too much.

Crockpot recipes are great. Usually easy and often don't use a lot of ingredients. Crockpot recipes are also great for beginners in the kitchen. Because I have 2 little kids and am busy, I make a lot of crockpot meals. I will take most recipes and turn into a crockpot meal even if it's not originally a crockpot recipe.

For anyone who has access to BARD (and we all should, grin) there's a cookbook titled "Not Your Mother's Slow Cooker Recipes, and it's great.

I have just been diagnosed with diabetes a few weeks ago, and this list has been great.
Presently I am in a situation where I can’t cook much either. I really like to cook, so it’s quite frustrating. I’m having some back issues that make standing difficult, but I am making the best of things. I use the crock pot quite a bit, as well as frozen fruits and vegetables. Even if you can just throw some vegetables in the microwave, along with a baked potato or something, that’s a good start.
