Eric,
Yes, learning to use the iPhone with voiceover definitely has a steep learning curve. are you aware of the nonprofit organization Hadley.edu?  That is their website and their phone number is. 1 (800) 323-4238 They provide free training remotely for people who are blind, or have low vision in a variety of ways covering topics from daily living tasks to technology, crafts, entertainment, etc. If your technology skills do not yet enable you to use the audios and videos on their website Feel free to call them and they have alternative ways of sending training materials to you including large print, and audio tapes that are played on the NLS book player. They can also do a little bit of short training by phone. Also if you are getting some training in Sacramento  using your iPhone maybe they could start with helping you learn how to use the libre app as that seems to be the most important in your life right now . I’m sure you can learn how to do it. We all started with very little knowledge of technology skills and built on that overtime. I agree that it is very frustrating at times, and the lack of knowledge amongst health professionals about blindness is unfortunate.
I would be more than glad to help you, but I am not really familiar with the Libre and I am hoping that someone else on this list will jump in and offer to perhaps talk with you by phone And walk you through the process.
