It seems fiddly, but if you mess it up, as I did the first time, just delete
it from the punctuation screen, and try again.
This only refers toVoiceOver, but perhaps the other voice systems have a
similar method.
You can change what voiceOver says, by going to the voiceOver settings under
Accessibility in settings.
Choose the speech button on the voiceOverscreen, then.
Choose pronounciations, then add.
On the next screen, you are in the "Phrase" field where you enter the text
you want to change.
Important, it needs to be the exact text, and if changing more than one
word, the spacing and any punctuation also needs to be correct.

Then in the substitution field, enter a single space to have voiceOver say
nothing, or an alternative word or phrase if that is preferred.
Further down...
The language can be changed if it is not the one you are using. Selecting,
"all", solves that mystery.
For voices, go in and choose, "all", as I have found that an I O S update
can sometimes change the voiceover voice.
I always set Ignore case to on to avoid fiddling with entering upper case.
I generally set the apply to apps, to all, but you may want to set it to
Dexcom, to avoid the phrase you changed being applied every where.
I cant remember whether setting the, apply to apps, to Dexcom will allow it
to apply to the lock screen.
Just a note, initially I had a lot of trouble getting it to work until I
realised that the language, voices etc need to match the voice that I am
using for voiceOver.
Just go backward through the, back, buttons till you get to the punctuation
screen, and you change should be displayed.

On the old 6g or the new 7 is there a way to change what it says for High &
Lows?
I cannot stand it yelling out Low blood sugar critical! The long loud &
long beeping is a big enough problem explaining to everyone, but I wish I
could take out the "critical" out of all the warnings.
