Depends on the meat and desired doneness. For example, hamburger should
always be cooked to greater than 165F but I like to take it up above 175.
Pork is done above 145 but I don't know anyone who eats it that rare and I
like to take it up to 175. I like chicken to be cooked to about 165. You
can get charts of optimal temps on a lot of sites on the net and how much
you go above the recommended temps depends on personal preference.
