So, the short answer is that they should find the contact and edit it.
If they hadn't entered a first name, last name, or company name; then they
should probably start over.
Here are general step by step instructions...
1) Go to the contacts tab in the phone app.
2) Find the search text box near the top of the screen. Double tap on
it so a keyboard appears.
3) Type in the name of the contact they didn't finished entering.
4) That contact should appear below the search text box. Double tap on the contact.
5) This should bring up a screen with the contact's information in it.
6) In the upper right corner of the screen, there should be an edit button. Double tap on it.
7) This should bring up a screen that looks like the one that was there when they were entering the contact. They should now be able to finishing editing the contact and then double tap on done.
That's it. I made lots of assumptions here, so if you have questions
feel free to ask.
