Hi. A lot of those chains also have braille menus, and they're pretty good
these days about updating them.
Also, the tablets, as far as I know, are a convenience still and not a
requirement to order.
So, I don't think we'll be seeing waiters and waitresses leaving anytime
soon. Now, if that does happen we better put our petty little blindy
differences aside and really start kicking some ass!

At least with Appleby's , you can check out their menu online in advance so
that you have some idea what you want to order before you eat there.  I ate
lunch at a nearby Appleby's in the Bronx about a month ago, and they still
took orders the old-fashioned way: by waiter.  Before my visit, I checked
the menu first online and decided what I wanted to order so that I would not
have to ask the waiter for help reading off the various menu choices. 
Apparently, no touchscreen tablets at this location yet.
