Hey Lisa,
Yes you can set up your echo without sight, especially if you have an iPhone to run the Alexa app on. If you don't have an iPhone, you can do it via the web, but I'm not sure how accessible that interface is.

Once the Echo is set up, you interface with it via its built-in microphone/speaker, the Alexa app for your phone, or a remote that you can purchase separately. All these methods are accessible.
You aren't required to have prime to get an Echo, but you'll be much more limited in what you can do with it. You won't be able to order items from Amazon, play streaming music for free with Amazon music, or a few other things.
You can add accounts for Audible, TuneIn, iHeartRadio, or Pandora. Except for TuneIn, I believe you must have paid accounts for these services, not just the free accounts.
