I have one too and am very happy with it.

I don't really understand the question "How does it do all this?", but I can say a few things about it.

First, It has several modes including pressure cooking, yogurt making, sauteing, steaming and rice cooking.

Each mode uses different heat elements, temperatures, pressures, etc. that get selected according to what you're trying to cook.

When using the pressure cooker, you fill the pot with the things you want to cook, a small amount of liquid (rarely more than a cup), and then turn on the pressure cooking mode.  The pot will heat up and allow pressure to build, then the food will cook for the time selected.

As an example, I have made beef stroganoff by putting stew meat into the instant pot and using the saute mode to brown the meet in the bottom of the pot; added onions, garlic, spices, etc. and let them brown; adding beef broth, wine, and worcestershire sauce; turning on the pressure cooker for "stew" and letting it cook at pressure for 35 minutes.  Finally, adding mushrooms , source cream, and allowing to simmer for 10 minutes.

I own the Instant pot that does not have bluetooth capability.  You can memorize many keys and sequences to get things working, but it brings much more piece of mind and ease of use to be able to control and monitor the pot using an IOS app on your iPhone.
