You do not have to avoid touch panels.  We have used one for the last almost 15 years.  We just put bump dots on the buttons for bake, temp up and down, and off.  The ovens usually beep each time you press the up and down arrows for the temp and adjust the temp in 5 degree increments accordingly.  It is totally manageable.  You will have a lot more options this way.

Avoid touch panels like the plague.  Knobs/dials desireable.  The newest Nuwave oven I can't recommend since I've heard it uses a touch panel.
Nuwave Precision induction cooker may be a possibility since it's button controled.
