Good question, brother, very hard. For me, I think I would choose Paul, at
least in his letters, his passion is so powerful, his awareness of his own
sin and the saving power of Christ through faith and grace is so extravagant
and beautiful. Also he had such a respect for God's sovereignty that it is
only parallel in the Gospel of John IMO. Yet still, when it came down to it,
Peter felt unworthy of being crucified the same as the master and was told
to have been crucified hanging upside down, now that is passion, humility
and faith in practice that is very, very palpable.
