I would not deny the existence of Ebionites, with the catalogue of beliefs
mentions, but you are taking a leap when you suggest that this is the group
the apostle Paul was persecuting.
I think you acknowledge this by putting this as a question.
Christians base Christian teaching on the apostles, including those who had
personal contact with Jesus and were eyewitnesses of his death and
resurrection.
That there were divergent teachings soon after Christ ascended to heaven is
true.  The Bible itself points out this fact.
To say that the Ebionites had the true faith is wide of the mark.
