Just to clarify, Paganism as it is used today refers to Neo-Paganism, which is a collection of generally polytheistic (though not necessarily so) faiths that tend to revere nature. Originally, it did mean what Justin said, but when you say Pagan today, it's referring to the Neo-Paganism movement, which began only in the last hundred years or so.
There are lots of religions under that, including Wicca, some reconstructionist religions (they try to reconstruct ancient religions, like ancient Greek mythology, etc), Neo-Druidism, etc. Some just label themselves as Pagan and that's it.
Also not all Pagans are witches or practice witchcraft.
