Right on. In addition, I'd look at the books published by the National
Braille Press; several have to do with getting started with iDevices and
assume no prior knowledge of them.

There is an excellent getting started section for iOS devices, containing
many how-to guides and mp3 files covering a variety of topics. While much of
it may specifically mention the iPhone, don't let that put you off. The iPad
runs the same operating system as the iPhone and much of the iPhone's
commands, gestures and apps apply to the iPad as well. There are a few
differences, of course, such as the location of some of the buttons and the
fact that some apps, such as Settings, display things a bit differently on
the iPad to take advantage of its larger screen. However, the majority of
the tutorials on this site apply to the iPad.
