I made the apple nut bread and took it to a potluck. There were only two differences. One was that I used unsweetened applesauce and the other was that I used olive oil, but not virgin olive oil. Not sure that would have been good because it has a strong flavor. I did not use vanilla. It didn't seem that the cinnamon and sugar were quite as nice on the top of mine. Maybe it needed les than I put on it. I put the recommended amount. Next time I might try making it with egg beaters; sometime I may modify it by using shredded apple. It was well received though, and this woman said I must bring it again.
