[Home-on-the-range] Hilton Hotels Apple Bread

While staying at the Airport Hilton in Wichita last weekend, I ate a really
nice apple nut bread. The staff were distributing the recipe so I got a
copy. I thought you might enjoy it.

 

This can also be made into muffins. Use the same recipe for the quickbread
and fill muffin cups two-thirds full, then bake.

 

I think pecans would work nicely in this recipe as well.

 

 

Hilton Hotels Apple Nut Bread

 

Preheat oven to dg325. Grease and flour a  loaf pan, in9 by by in5 by by
in3.

 

Ingredients:

 

½ cup packed, shredded carrots

1 cup canned, sweetened applesauce

½ cup corn oil

1 tsp vanilla

2 eggs, beaten

¾ cup granulated sugar

 

Combine carrots, applesauce, oil and vanilla in a bowl. Add eggs and sugar,
mixing all ingredients together. Then  combine the following:

 

2 cups all-purpose flour

1 tsp double-acting baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon

½ tsp nutmeg

½ cup chopped walnuts

 

Mix dry ingredients and nuts together. Stir into applesauce mixture. Mix
only until all ingredients are blended; DO NOT OVERMIX!  Pour into greased
and floured loaf pan or muffin cups. Spread batter evenly. Then combine:

 

5 tbsps sugar

½ tsp cinnamon

 

Combine sugar and cinnamon. Sprinkle over top of muffins or bread.  Bake at
dg325 for one hour, or until a wooden pick inserted in the center comes out
clean. Bread should have a crack down the center. Remove from pan and cool
on rack. Enjoy!
