I think  Debbie,  Dave and Sharon gave you the best advice.  You should use both a headset on your  speech device  in combination with a recorder.  In that way you can get the notes down correctly while using your speech software without anyone being the wiser. 
  You should also practice using them prior to your next assessment test.
