Hi.  When you mix music for mp3, cd, etc, you are mixing in stereo, left and
right channels.  Unless you mix mono, which is one channel.

Surround sound is for 5.1 or 7.1 systems etc.  Some music is now being mixed
or remixed in surround but it's still most common in the Imax theaters, on
dvds, etc.  Most home theater systems support surround sound.
