Tim,


I think Audacity is your best bet. Mark Dew has created several 
tutorials regarding various aspects of Audacity.


You can record MIDI into Audacity. Audacity converts Midi to a wav file 
automatically. Then you can convert the wav tracks to an mp3 orr mp4, etc.
