It may be that the sound is coming through the earpiece rather than the speaker. Try holding your phone up to your ear and see if you can hear the recording. If you can, you can pause the recording and select the speaker button in order for your sound to come through the speaker. I haven't found a way to set this as the default.

Also, if you haven't done this already, I would suggest trying the DropVox app. In my opinion, DropVox offers a much faster and simpler interface than the built-in Voice Memos app. Most importantly, though, DropVox automatically backs up all recordings in a Dropbox folder, meaning that you'll have a backup of all recordings you make which can be accessed on any of your devices.
