Hi Danielle, 
Assuming you are talking about a poster that can be printed and displayed for your class, I have no direct solution on your inquiry. 
The last time I had to make a poster of this kind was about a year ago, so not super up-to-date, but in short, I think the best way to accomplish this task is working with a sghted assistant. 
I think having a general idea of the layout and how you want to display your content and then communicating that to the person helping you would be the most efficient way to get this done. 
I would also ask that person to give you feedback on aesthetics and readability and make your decisions on style, font, etc. accordingly.
