Jennifer,
You have to keep the litter box where the dog can't get to it, period. This
may sound gross, but dogs consider cat poop to be a delicacy! You know,
recycled cat food! (grin!) You'll have to keep the cat food bowls out of
reach as well - dogs LOVE CAT FOOD!
I don't have a cat but used to baby sit my parents' cat when they went on
vacation. I had all the cat's stuff in our guest room so my dog didn't go
in there. Cats need a quiet and secure place for their pottying. Let the
guide dog school know about your cat and they can tell you what to do to
have a smooth transition.
People I know have put the litter box and food up high where the cat could
go and the dog couldn't go. If you own your place, you could put in a cat
door on the door to the room the cat will be in for refuge from the world.
Keep tabs on the dog - it should be on leash or tiedown for the first couple
of weeks after you're home. that way, you prevent accidents and litter box
diving.
With a dog, your home will have to be "dog proofed" much like you do with a
crawling baby. Dogs and babies are alike - it sees something and in the
mouth it goes.
Good luck. And yes, anytime you have a question, don't hesitate to ask on
this list - we're all here to help each other out!
